IT WAS once the chosen treat of seniors but now Australians of all ages are embracing dark
chocolate, lured by its reputed health benefits.

Some doctors and dietitians are recommending a moderate intake of the bittersweet dark
chocolate for heart health and its high levels of antioxidants.

Sales of dark chocolate have grown by close to 40 per cent since last year, research by
manufacturer Lindt found. The $80 million national market has been boosted by the addition
of exotic flavours such as chilli.

Until my tastebuds fail me, milk chocolate or semi-sweet chocolate are fine with me. I will not become a fan of dark chocolate despite the health attributes of the past couple of years extolling dark chocolate "goodness."

I like dark and milk chocolate but I would say white chocolate is my favorite of
the 3.

Chili in chocolate is sick.

OK, Chilli chocolate is not as bad as it sounds. I've had it. While it is spicy, the chocolate keeps it from being too hot. It's actually very good! But I have to say, I like cajun food so "kickin it up a notch" doesn't bug me at all. The Japanese had wasabi chocolates for sweetest day...now THAT does not sound appealing at all!

But knowing chocolate is healthy....makes me happy as they come! I LOVE chocolate!

I just cant get into the idea of trying chili chocolate. I like some fillings in chocolate but chili I just
wont try.

Wasabi:

Wasabi (Japanese: わさび,ワサビ , 山葵 (originally written 和佐比); Wasabia japonica , Cochlearia wasabi,
or Eutrema japonica) is a member of the Brassicaceae family, which includes cabbages, horseradish and
mustard. Known as "Japanese horseradish", its root is used as a spice and has an extremely strong flavor.
Its hotness is more akin to that of a hot mustard than the capsaicin in a chili pepper, producing vapors
that irritate the nasal passages more than the tongue. The plant grows naturally along stream beds in
mountain river valleys in Japan.

Wasabi Chocolates - Horseradish and chocolate. Have not tried and no desire to.

Perugia choc fest gets under way
Sweet treats 'to ease anxiety of credit crunch'

The hugely popular Eurochocolate festival kicks off in Perugia on Saturday with a bulging programme
for sweet-toothed visitors.

Around 150 Italian and international chocolate companies will set up stands in the city's historic centre,
offering the public a chance to sample well-known brands as well as hand-crafted pralines and cups of
hot chocolate.

Play Chocolate is the theme of the 2008 edition of the eight-day festival, which attracts over a million
visitors to the Umbrian town each year.

I recall that some chocolate festival or showcase occurred in Turin, Italy during its hosting of the 2006 Winter Games. Hot chocolate sounds as lovely as cocoa in the autumn-yummy!

Work doesn't have to be a chore. Launching a series looking at dream children's careers, Lucy Rodgers
unwraps the secrets of the professional chocolate taster.

As far as fantasy jobs go, chocolate tasting must come pretty near the top of many people's lists - children
and adults alike.

However, sampling and buying the best sweets the world has to offer for luxury Piccadilly department
store Fortnum and Mason is probably beyond most chocoholics' wildest dreams.

That is what Darren Williams does for a living.

The 43-year-old confectionery buyer spends his working hours researching, sampling and negotiating
deals on top-of-the-range chocolate and sweets from across the UK and abroad. And he is unable to
disguise his glee.

Life can be tough but someone has to do this for a living. I hope a lifetime gym pass and personal trainer
come with the job.

Someone is living a Willy Wonka existence? Even I would tire of chocolate, specialty or otherwise, if I had to sample them often.
